This coffee is nostalgic. Javanica has a delightful smell of caramelized sugars.While hot, the coffees nutty chocolate flavors come forward and as it cools the more complex flavors like molasses, herbal tea, & black currant begin to fill the cup.

About Don Roger & Isabella of Nicaragua
Roger Mairena and his wife Isabel have a farm near the Arenal Nature Reserve. Don Roger has a degree in agronomy, and he loves sharing technical knowledge and tips with visiting roasters. A stream begins on the family’s property, allowing clean spring water for washing coffee and for sharing with the community. The farm has a special system of PVC tubing with tiny perforations underneath the groves of trees so that runoff from washing coffee is filtered by the earth instead of polluting streams.

Theory Collaborative
Like so many specialty roasters, Theory Collaborative started in a garage. Roasting coffee was originally an escape fantasy/retirement dream for owner, Sam LaRobardiere, until roasting equipment and some green coffee basically fell into his lap. Then as a hobby roaster, he began selling at a pop-up for community events and artisan markets, and in 2016 took the leap to open both roastery and coffee shop.
Over the years, the folks at Theory Collaborative have honed their coffee skills and built strong coffee-sourcing relationships. Along the way, they garnered 5 Golden Bean awards in 2018 including a Gold Medal in the espresso category, and won Twitter’s brew off Competition in 2019. Listed as one of the top 30 roasters in North America by Golden Bean, they’re not stopping there. In fact, Theory Collaborative has been invited to cater coffee for the Emmy Awards in LA.
Sam says, “If we were superheroes, our super power would be collaboration.” From local kombucha and craft brewers to art shows, Maker Markets, and block parties, Theory is more than just a great roaster. “We truly believe that as we partner with other like-minded businesses, everyone involved benefits from the relationship.” As they like to say, they are “Theoryously” passionate about coffee!
